Guatemala El Injerto Pacamara Natural

Behind Our Latest Exceedingly Rare Coffee

El Injerto’s Private Auction

It’s rare for a coffee producer to launch a private auction, never mind one that attracts global attention.

But El Injerto’s reputation precedes them—they’re Cup of Excellence winners nine times over, CO2 neutral certified at the farm-level, and dedicated to investing heavily back into their community.

While we’ve worked with this fourth-generation farm since 2015, El Injerto offered this sought-after coffee exclusively through their auction, and we were lucky enough to be the only US roaster to secure a batch.

Pure Pacamara, A Beloved Cultivar

This coffee’s story starts in the lush, western highlands of Guatemala, beneath the protective, shady tree canopies that stretch across the Aguirre family’s world-renowned farm in Huehuetenango. After harvesting at peak ripeness, El Injerto naturally processed this Pacamara on site, with hydropower and sun.

Pacamara is a sought-after cultivar, an unusually large hybrid created in the 1950s in El Salvador. And it’s as finicky as it is transcendent—to get to that first blissful sip, Pacamara demands uncompromising attention to detail from seed to cup.

But the results are well worth El Injerto’s effort. Indulgent and transporting, this pure Pacamara is a tropical daydream that drapes you in the sweet, bright decadence of a sunbeam.
